# How to Make It:

03 - Heat a large skillet over high heat. Sear the beef in batches for 2 to 3 minutes per side until just cooked through. Remove from heat and keep warm.

06 - Drizzle each bowl with the yogurt-lime dressing and serve immediately.

# Expert Advice:

01 -
  • Everything cooks in under an hour with mostly hands off time for the sweet potatoes
  • The warm beef and roasted potatoes contrast perfectly with cool creamy avocado
  • You get protein, vegetables, and healthy fats all in one bowl
02 -
  • Crowding the pan when searing the beef will cause it to steam instead of brown, so cook in batches for the best flavor
  • The dressing can be made up to two days ahead and stored in the refrigerator
03 -
  • For even more flavor, let the beef marinate in the spice mixture for up to an hour before cooking
  • If your sweet potatoes are not browning enough, run them under the broiler for the last 2 to 3 minutes
