02 - Soak rice noodles in warm water for 20–30 minutes until pliable, then drain thoroughly.
03 - Arrange the thinly sliced beef, vegetables, herbs, lime wedges, and dipping sauces on large platters for table service.
04 - Set up a portable tabletop burner or electric hot pot with the simmering broth in a wide, shallow pot.
05 - At the table, diners add noodles, vegetables, and beef slices to the simmering broth, cooking them to desired doneness. Beef requires only seconds to cook.
06 - Ladle cooked items and broth into bowls. Top with herbs, fresh lime, and dipping sauces as preferred.

02 -
  • If your broth isn't simmering gently when guests arrive, everything falls apart because the beef won't cook properly and noodles turn mushy, so start that broth early and give it time to infuse.
  • Fish sauce smells absolutely terrible raw but becomes essential magic once it's simmered into the broth, so don't let anyone convince you to skip it or substitute it.
03 -

  • Prep all vegetables and arrange everything on platters the morning of, then refrigerate until it's time to eat, which removes the frantic energy from cooking.
